The chestnut mushrooms, just like the white mushrooms, are grown in special rooms (cells) where an optimal climate is created via the temperature and humidity. The chestnut mushroom is the light brown variety of the white mushroom, with a light beige to brown cap instead of white.
As with white mushrooms, you should carefully clean the chestnut mushrooms and do not put them in the water, because then they will suck themselves full of water. This comes at the expense of the taste. The taste is slightly nutty. The flesh is somewhat firmer than that of the white mushroom and the taste is somewhat fuller.
Prepare and store
It is best to use chestnut mushrooms as fresh as possible. Fresh chestnut mushrooms can be stored in the refrigerator for about 5 days after purchase. Never store mushrooms with fruits that release ethylene, such as apples and exotic fruits, and do not store mushrooms with strong-smelling vegetables such as leeks and onions, because mushrooms easily absorb odors.
