Quick-cook rice or 'parboiled' rice is pre-cooked and then dried again. The vitamins and minerals from the pericarp are (partially) transferred into the rice grain. The structure of the parboiled rice is dry and grainy. Parboiled rice is commonly used in Indian and Pakistani cuisines.
